What is HP in-game?
Hit Points — the mons' health bar in battle. Derived from Stamina IV + species base Stamina + level (CPM).

HP is what depletes when your mons takes damage. The formula is floor((Sta_base + Sta_IV) × CPM). A hundo Blissey at L40 has 510 HP — the highest in the game.
HP drives effective bulk together with Defense. PvP "stat product" multiplies HP × Defense × Attack — the larger the product at a given CP cap, the more total damage you can deal and absorb before fainting.
In raids HP regenerates after fainting (one revive), but in PvP your HP at the end of one battle does not carry over to the next.
